1 banana, chopped in chunks and frozen
½ cup frozen blueberries
1 oz spinach (I used frozen chopped)*
1 egg yolk
1 cup almond milk or coconut milk**
*Cannot taste it. Cannot see it. The deep blue of the berries is wonderful camouflage, and makes this into a green smoothie that is not even green. Another wonderful way to incorporate stealth vegetables for picky eaters.
**Coconut milk is great in terms of delivering healthy fats, but it can be almost too thick for smoothie creation. When I am making my smoothies I will sometimes combine coconut milk and water to get the consistency I want. I will also sometimes skim the cream off of the top of a can of coconut milk and reserve it for another purpose (cupcake frosting, anyone?), and then use the thinner milk that is left in the can for my smoothie.
Place all of the ingredients into your blender and blend until smooth. Makes one large adult serving or two kid-size glasses.
