This is a simple and easy refreshing smoothie that I usually enjoy along with my 2-egg breakfast. The yogurt (especially if it is homemade) provides a probiotic boost, a decent dose of protein, and lots of healthy dairy fats (especially if you made it from grass-fed milk), all without the lactose hit that can irritate so many people’s digestive systems – mine included. The egg yolk is another amazing source of nutrients and healthy fats (especially great for my baby’s brain development). The strawberries and banana top off this delicious creation, providing a natural source of sweetness.
Simply combine all of the following ingredients in your blender or food processor, blend until smooth, and go!
½ cup yogurt
1 egg yolk
½ cup almond or coconut milk
½ cup frozen, sliced strawberries
1 banana, chopped into chunks and frozen
If you want an extra Omega-3 boost, along with some A, D, and E vitamins, I have found that a tablespoon of fruit-flavored cod liver oil blends into this smoothie wonderfully. I use oil with a natural berry flavor, and it makes the smoothie that much creamier and the strawberry flavor that much stronger. For those who dislike either the taste or texture of cod liver oil, this smoothie is great camouflage – a very effective way to sneak some cod liver oil superfood into your diet.
