Easy Paleo Chocolate Pudding

Alright so maybe it is not quite as easy as a box of jell-o, but it is darn close, and a whole lot healthier – no hydrogenated oils, artificial flavors, or refined sugars. And no dairy, either. In fact, this recipe does not have all that many sugars at all, for a dessert. What it does contain is lots of healthy fat from the coconut milk and antioxidants from the cocoa powder. This recipe makes two moderate-sized servings, and is easy to halve, double, or even triple, depending on the size of the crowd. It is perfect for a quick, easy, light, chocolatey dessert.

1 cup coconut milk or unsweetened almond milk
¼ cup cocoa powder
2 tbsp arrowroot
2 tbsp honey
1 tsp vanilla extract, or almond extract, depending on your mood

Combine all ingredients except the vanilla in a small saucepan and heat over medium heat, whisking almost continuously (lest you end up with clumps of arrowroot in your finished product). Once your liquid thickens to a pudding-like consistency, remove from the heat and whisk in your vanilla or almond extract. Spoon into serving dishes and chill.
