Coconut Curry Chicken Soup

We had a chilly, rainy day here in Wisconsin today, so I decided to ditch what had been on my meal plan and make a warming, nourishing soup. Well, that and I had a whole bunch of homemade chicken stock in the fridge that I needed to use up. This dish is quick and simple to put together, and the combination of coconut milk and thick, rich chicken stock makes for an amazingly healthy, delicious, and creamy base. Add in the curry spices, and it is a real winner!

1-2 lbs uncooked chicken cut into small pieces
Curry powder to taste
2 tsp salt
1 bell pepper, diced
1 medium onion, diced
Olive oil
1 can coconut milk
3 cups homemade chicken stock
1 tbsp red curry paste

Sprinkle curry powder and salt evenly over the chicken. Heat a deep pot and add the olive oil, prepared chicken, onions, and bell pepper. Stir until chicken is cooked through and vegetables are tender. Add coconut milk, stock, and red curry paste. Bring to a boil, then simmer long enough to blend the flavors. Taste to make sure the spice level is to your liking, then ladle into bowls and serve.
