Chicken and Tomato Yogurt Curry

This is an easy and delicious Indian-styled dish that met with hearty approval at our house. As I have mentioned before, Nick and I both have a fondness for Indian cuisine, and this incorporates some of our favorite elements. It is also a fantastic way to cook with some homemade yogurt – the flavor and creaminess of the yogurt in this main dish are amazing.

1 lb chicken pieces, cut to bite-size (I used breasts, which I deboned and skinned)

Marinade:
4 cloves of garlic, minced
1 tsp ginger
1 tsp cumin
1 tsp salt
1/2 tsp turmeric
1/2 tsp garam masala
1/2 tsp chilli powder
2 tbsp lemon juice
½ cup yogurt

Cooking oil of choice
1 onion, diced
1 cup tomato paste
1 cup chicken stock
1 tsp coriander
1 tsp cumin
1 tsp garam masala
1 tsp chili powder
1 cup yogurt

In the morning, mix together the ingredients for your marinade, coat the chicken with it, and leave in the fridge all day (about eight hours). When you return home in the evening, heat up a large skillet, coat with oil, and add in your marinated chicken and diced onion. Cook on medium heat for about ten minutes or so, turning often, until the chicken is nicely browned and the onion soft. In the meantime, stir together the tomato paste, chicken stock, and spices. Add this to the pan and continue cooking for another ten minutes or so, or however long it takes to cook the chicken through. To finish, stir in the yogurt. Make sure the whole pan is heated through, then scoop into bowls and serve.

    Oh my goodness. It’s one in the morning, and I should be going to bed, but instead I’m looking at your delicious food and my stomach is grumbling – because, well, there’s NOTHING better than curry! I (surprisingly!) have all the ingredients for this, and will totally be making it in the morning!
