My Go-To Easy Eggy Breakfast Casserole (Or Busy Weeknight Dinner)

This is one of my favorite basic recipes. I love to pull it out when I am short on time. This casserole can easily be assembled the night before and put in the oven in the morning for a no-fuss, filling family breakfast. I very often make it for dinner as well. I love that I can assemble it in the morning before I leave for work, and then if Nick happens to get home earlier than me, I can just ask him to put it in the oven so it is ready when I return. And I have a hot, delicious supper waiting for me! This is my basic recipe, and I very often experiment with different spices and cheeses. Feel free to adapt to your family’s tastes.

1 small sweet potato, finely grated (I used a cheese grater and some elbow grease to achieve a ‘skinny hashbrown’ effect)
1lb sausage
1 medium onion, diced
5 cloves garlic, minced
10 eggs
¼ cup heavy cream (optional, but gives the eggs a great fluffy texture)
2 tsp salt
2 tsp pepper
4oz cheese, grated

Preheat your oven to 350 degrees. Grease an 8x8in pan and spread your grated sweet potato around the bottom. Next cook your sausage until no longer pink and spread on top of the potato. Sauté the onion and garlic in the sausage grease until no longer translucent and spread on top of the sausage in your pan. In a large bowl, combine your 10 eggs, cream, salt, and pepper, and blend. Add to the pan and, finally, top with cheese. I love the taste of sharp cheddar, so that is what I used. Bake uncovered for approximately 50 minutes. I served this casserole with a side of berries and cream and, to drink, café à la crème (yep, café au lait, except with heavy whipping cream). I get decaf.

I just learned a very nifty trick to make café au lait at home without the fancy coffee shop espresso machine. Check back next week for that bit of money-saving information. (I mean, why go to Starbucks when you can DIY at home?)
